Regal Cajun Salmon Steaks



Regal Marlborough Salmon fillets & steaks carry the Heart Foundation Tick of Approval(Serves - 4)

Ingredients

  • 4 large Regal salmon steaks
  • 2 tablespoons Cajun spice mix

Salad

  • 2 teaspoons small cucumbers, cut in half and sliced thinly
  • 1 red pepper, thinly sliced
  • 1 small red onion, thinly sliced
  • 2 tablespoons coriander leaves

Dressing

  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 2 tablespoons sweet chilli sauce
  • 1 teaspoon small red chilli, chopped
  • 1/2 cup garlic clove, crushed
     

Method

  1. Sprinkle the spice mix over the salmon steaks.  Cook the salmon over a preheated barbeque or under a preheated grill for 3 to 4 minutes or until just cooked.
  2. Combine the cucumber, red pepper and red onion in a bowl. Add the dressing and toss gently. Scatter the coriander leaves over the salad and serve immediately with the salmon steaks.
  3. To prepare the dressing, combine all ingredients.
