Regal Cajun Salmon Steaks
Regal Marlborough Salmon fillets & steaks carry the Heart Foundation Tick of Approval(Serves - 4)
Ingredients
- 4 large Regal salmon steaks
- 2 tablespoons Cajun spice mix
Salad
- 2 teaspoons small cucumbers, cut in half and sliced thinly
- 1 red pepper, thinly sliced
- 1 small red onion, thinly sliced
- 2 tablespoons coriander leaves
Dressing
- 1/4 cup lime juice
- 1/4 cup olive oil
- 2 tablespoons sweet chilli sauce
- 1 teaspoon small red chilli, chopped
- 1/2 cup garlic clove, crushed
Method
- Sprinkle the spice mix over the salmon steaks. Cook the salmon over a preheated barbeque or under a preheated grill for 3 to 4 minutes or until just cooked.
- Combine the cucumber, red pepper and red onion in a bowl. Add the dressing and toss gently. Scatter the coriander leaves over the salad and serve immediately with the salmon steaks.
- To prepare the dressing, combine all ingredients.
