Regal Smoked Salmon Pizza
Ingredients
- 200 gram packet Regal Wood Roasted Salmon
- 25 cm prepared pizza base without toppings
- 1/4 cup sundried tomato pesto
- 2 courgettes
- 2 red peppers
- 1 carrot
- 1 tablespoon oil
- 150 gram packet natural unsweetened yoghurt
- 1/4 cup fruit chutney
- 1 tablespoon chopped parsley
Method
- Spread pizza base with tomato pesto.
- Bake at 200 degrees C for 5-7 minutes or until cooked and golden.
- Trim courgettes and cut into quarters lengthwise. Halve peppers and deseed. Peel or scrub carrot. Cut into thin strips.
- Brush vegetables with oil and grill for about 10 minutes or until lightly golden and cooked.
- Pile on top of pizza base.
- Remove salmon skin and break into chunks. Pile on top of vegetables.
- Mix yoghurt and chutney together, drizzle over salmon and vegetables.
- Sprinkle with chopped parsley and serve.
