Regal Salmon With Mexican Corn Fritters
Ideal for brunch or lunch.(Serves - 4)
Ingredients
- 1 400 gram can corn kernels drained
- 1 cup self-raising flour
- 1 teaspoon baking powder
- 3 eggs
- 1/4 cup flat leafed parsley chopped
- 1/4 cup milk
- pinch nutmeg
- salt to taste
- 1 100 gram pack Regal Marinated Salmon (Gravalax)
- 1/2 cup horseradish cream
- handful of rocket leaves
Method
- Place the corn, flour, baking powder, eggs, parsley and seasonings in a bowl and mix to a batter.
- Cook dessertspoonfuls of mixture like pikelets in a hot greased fry pan for approximately 4 minutes each side until golden. Keep warm.
- To serve place a corn fritter on a serving plate and top with rocket, Regal Gravalax, and a dollop of horseradish cream. Top with a second corn fritter.
