A Regal Salmon Breakfast
For a Regal breakfast or brunch with family or friends.(Serves - 4)
Ingredients
- 2 large Rua potatoes grated
- 1/4 cup flat leafed parsley, chopped
- 6 eggs
- 2 tablespoons flour
- seasoning to taste
- olive oil spray
- 100 grams ricotta cheese
- 1 100 gram pack Regal Marinated Salmon (Gravalax)
- 2 cups watercress tips
- 4 tomatoes halved and grilled
Method
- Rinse the grated potato in cold water and drain. Place the potato in a clean tea towel and squeeze out any remaining moisture. Mix the potato, parsley, 2 eggs, flour and seasonings together.
- Cook flattened spoonfuls of mixture in an oil sprayed pan until brown and crisp. Drain on kitchen paper.
- To assemble, place a potato wafer on a serving plate and spread with a little ricotta cheese topped with a couple of slices Regal Gravalax then a little water cress.
- Top with a second potato wafer, poached egg and more Regal Gravalax. Serve the grilled tomato on the side
