A Regal Salmon Breakfast

For a Regal breakfast or brunch with family or friends.(Serves - 4)

Ingredients

  • 2 large Rua potatoes grated
  • 1/4 cup flat leafed parsley, chopped
  • 6 eggs
  • 2 tablespoons flour
  • seasoning to taste
  • olive oil spray
  • 100 grams ricotta cheese
  • 1 100 gram pack Regal Marinated Salmon (Gravalax)
  • 2 cups watercress tips
  • 4 tomatoes halved and grilled
     

Method

  1. Rinse the grated potato in cold water and drain. Place the potato in a clean tea towel and squeeze out any remaining moisture. Mix the potato, parsley, 2 eggs, flour and seasonings together.
  2. Cook flattened spoonfuls of mixture in an oil sprayed pan until brown and crisp. Drain on kitchen paper.
  3. To assemble, place a potato wafer on a serving plate and spread with a little ricotta cheese topped with a couple of slices Regal Gravalax then a little water cress.
  4. Top with a second potato wafer, poached egg and more Regal Gravalax. Serve the grilled tomato on the side
