A Word From Fiona
Hello to all,
The summer period has been very busy for New Zealand Wholesale Seafoods and with all the good weather we have been having lately I am pleased to inform you that fish supply has been plentiful.
We are forever trialling new products to provide for our customers and many are just too good to pass up! I hope those of you who tried any of the Te Mata cheeses I mentioned last month enjoyed the experience. The feedback so far has been very positive.
Unfortunately, the Cloudy Bay oyster season has finished but not without more exciting oyster temptations on the horizon.
On the 19th of February our first delivery of Nelson oysters will arrive. These oysters are renowned for their delicate yet succulent flavour and have a medium oil content, they are also down on price this year at $16.95 for a dozen.
The Bluff oyster season starts on the 1st of March and our first delivery should arrive on the 4th, weather permitting. Bluff oysters are celebrated as some of the finest in the World. They are grown slowly in the cold waters of the Foveaux Strait and are dredged in season.
In this issue we have added a section on keeping shellfish fresh. I hope you will read on for our tips!
Also this month, we talk to Geoff Scott, owner and head chef of Vinnies restaurant. Make sure you check out the delicious recipe he has kindly shared with us.
Talk soon,
Fiona
